Basic Tomato Meat Sauce
Ingredients
1 medium sized onion finely minced
1 clove garlic, crushed
2 tbl olive oil
1 tbl butter
1/2 lb chopped beef
1/2 lb chopped pork or veal
1 16oz van Italian tomatoes, drained
1 6oz can tomato paste, diluted with 1 cup hot water
1/2 tsp sugar
1 tsp basil
1/2 tsp oregano
Salt and pepper to taste
Preparation
Sauté garlic and onion in hot olive oil and butter; do not brown. Blend chopped beef, pork or veal with the sautéed onions. Brown, stirring well with a wooden spoon to prevent meat from lumping. Drain tomatoes well, then place in a strainer over a large bowl; rub with the back of a wooden spoon. Discard residue. Combine tomato pulp, wilted tomato paste, sugar, basil, oregano; salt and pepper to taste. Simmer sauce over low heat for 20 minutes, stirring occasionally. Add browned, chopped meat mixture to the hot sauce. Stir well. Continue to simmer gently over low heat for 1 1/2 to 2 hours until the sauce is smooth and thick.
