Seafood Neuburg

Serves 80

2lb. Melted butter
2lb of flour
Stir to paste and add half a gallon of milk
1/2 a jar of lobster base
1/2 cup of sherry wine Holland
Set all this aside

Saute fish in a little butter

2lb of each fish for 80 people

1/2 lb of scallops
Sea legs
Shrimp
Crab meat
1/2 tsp. Salt
1/2 tsp paprika
Cayenne pepper

1 1/2 cup coffee cream + chicken cube
3 large egg yolks
2 Tbs of sherry

​Melt butter 1/3 cup
Blend in flour add cream with seasoning and cook until thick and smooth
Beat in 3 large egg yolks + 2 Tbs of sherry
