Chicken Cacciatore
Ingredients
1/4 cup oil
2 1/2 to 3 pounds of chicken
1 cup chopped onion
Two cloves of garlic crushed
One chicken bouillon cubes
1 cup of boiling water
1 lb canned tomatoes
6 oz can tomato paste
8 oz fresh mushrooms
1 large green pepper
1/4 cup parsely
1 tablespoon salt
1/2 teaspoon of pepper
1/2 teaspoon of thyme
2 bay leaves
Dash of cayenne pepper
Directions
Heat oil in skillet, add chicken and brown until golden, add onion and garlic, brown slightly drain off excess fat dissolve bouillon cube in boiling water and add to chicken, add remaining ingredients, cover and simmer for one hour until tender. Remove cover during last half hour.
