Pork Tenderloin w/ Guacamole
Ingredients
Marinade
1/2 cup dry red or white wine
2 tbls balsamic vinegar or red wine or white wine vinegar
2 tabls oil
2 tsp chopped fresh thyme or 1/2 tsp dried thyme
1/2 tsp salt + salt to taste
1/4 tsp freshly ground pepper + pepper to taste
Pork
2 pork tenderloins, about 1 lb each, trimmed of fat
Guacamole
2 or 3 ripe avocados
1 large ripe tomato, peeled, seeded and chopped
1 clove garlic minced
2 tbls chopped fresh cilantro
2 tbls fresh lime juice
1/4 tsp Tabasco
1 tsp minced jalapeño
Accompaniments
Flour or corn tortillas.
Preparation
In small bowl mix wine, vinegar, oil, thyme, 1/2 tsp salt and 1/4 tsp of pepper. Put tenderloins in plastic bag and pour in marinade, Seal and frig for at least 2 hours.
Pit and peel avocados and mash leaving a few small lumps. Mix in tomato, garlic and cilantro; then mix in lime juice, Tabasco, jalapeño and season with salt and pepper. Seal and keep cool until serving.
Grill tenderloins, basting with marinade. Let sit for 5 minutes, when cooked. Cut into slices and serve with guacamole.
