Ingredients
- 2 pork tenderloins
Marinade:
- Juice of 1 lime
- Zest of 1 lime
- 1/2 cup canola oil
- 1/3 cup soy sauce
- 3 tablespoons rice vinegar
Honey Garlic Paste:
- 1/3 cup honey
- 1/4 cup canola oil
- 6 cloves garlic minced
- Zest of 1 lime
- Juice of 1 lime
- 1 tablespoon dried oregano
- 2 tablespoons brown sugar
- 1 teaspoon smoked paprika
- 1/2 teaspoon onion powder
- 1/4 teaspoon cayenne pepper
Green Sauce:
- 1/4 cup extra-virgin olive oil maybe even less than 1/4 cup
- 1 tablespoon red wine vinegar
- Juice of 1 lime
- 1 teaspoon lime zest
- 1/3 cup parsley finely chopped
- 1/3 cup green onions finely chopped
- 4 cloves garlic minced
- 1/4 teaspoon crushed red pepper flakes
- Kosher salt
- Freshly ground black pepper
- Added soy sauce and a little more red wine vinegar
Instructions
- In a medium bowl combine all the marinade ingredients, pierce the pork with a fork all over the surface and add it to the bowl. Cover and marinate for 2-3 hours or 24 hours.
- In another medium bowl combine all the Paste ingredients, when ready to grill the pork. Stir until smooth.
- Remove pork tenderloin from marinade, pat dry and spread the paste generously over it.
- Heat grill or grill pan to medium-high heat. Grill pork for about 20 minutes, turning occasionally with tongs until charred and a thermometer inserted into the thickest part reads 145 degrees F. For larger tenderloins, cook longer until desired internal temperature is reached.
Green Sauce:
- In a medium bowl, stir together all ingredients and season with salt and pepper.
- Let the pork rest 10 minutes, then slice and serve with the sauce.
