Quiche with Prawns
Ingredients
10" pre-baked pastry shell
3 slices of bacon cut in strips
1 medium onion diced
8 fl. oz of single cream
4 oz of peeled prawns
2 eggs and 1 egg yolk
salt and freshly ground pepper
half a pinch of grated nutmeg
Directions
Pre-heat oven to 375 F
Saute bacon strips until fat begins to run. Drain on paper. Gently fry onions until soft. Add prawns and cook for a few more minutes; remove from pan and drain on paper.
Combine cream, egg and yolk, cream, salt, pepper and nutmeg. Sprinkle bacon, onions and prawns in base of shell and pour cream mixture over it.
Bake for 40 minutes until golden brown.

Make about 12 oz of pastry for a crust and line dish. Pre-bake for for 10 minutes at 350F

8 oz milk 1/2 milk, 1/2 carnation milk
2 eggs, 1 egg yolk
1 quart of mushrooms
3 slices of bacon
1 medium onion chopped
3 oz cream cheese, 1 oz butter
Directions
Fry bacon, mushrooms and onion in butter.
Beat eggs, milk and seasoning together and add cheese.
Put fried ingredients into bottom of pastry shell and pour mixture over it.
Bake at 375F for 35 minutes

Quiche Lorraine an alternative
Ingredients quiche lorraine for 6 people
1 puff pastry
170 gr Swiss cheese
5 large eggs
170 gr ham and bacon
1 tin of sliced or fresh mushrooms
1 cup evaporated milk
1/2 green onion
1/2 cup of milk
1 teaspoon of salt
1/2 teaspoon mustard
1 teaspoon pepper
Tips before you start cooking the quiche lorraine
This classic French recipe is simple but satisfying, and easy to make if you follow these rules.
First, make sure the puff pastry is cold. Second, measure the ingredients carefully. If you add too much flour, the quiche filling will not be light. And third, make sure to use milk with 2% whole milk and do not skimp on the cream. The fat in the cream increases the richness of the recipe and makes the quiche filling much smoother.
You can use any type of cheese you want in this recipe for quiche lorraine. In Cocínate el Mundo we like the combination of cheeses like Havarti and Parmesan.
Before starting to cook the quiche lorraine we will preheat the oven to 180ºC.
On the one hand we will deal with the puff pastry dough and on the other hand the filling. First we start by preparing the quiche lorraine for the base, for the refrigerated puff pastry dough.
We take the puff pastry dough and spread it on the base of a round baking dish. We make sure that it stays well adapted to the container. To give a rounded shape to the edges, we will sink the finger making every two or three centimeters.

Now, we prepare the filling of the quiche lorraine. For this, in a bowl sprinkle cheese, ham and cheese cut into small cubes inside. If you want to add chives, this is the moment. In another bowl we have to beat the eggs, the cream of milk, the milk, the salt, the black pepper and the mustard until they are well mixed. We pour this mixture inside the puff pastry base. On these ingredients and before baking, sprinkle with ham and grated cheese. For example, a very good option is mozzarella cheese that will melt in the oven and will be delicious.
Last steps
The last step is to bake the quiche lorraine for 45 minutes or until a knife in the center comes out clean. We cut the quiche into pieces to serve.
