Boneless Pork Roast with Stuffing
Serves 8
Ingredients
10 oz pkg frozen spinach, cooked and drained
3/4 lb. bulk sausage
1/2 cup Italian bread crumbs
1/2 cup sliced almonds
2 eggs
1 tbl onion powder
1 tbl beef bouillon paste or soup base
1 tsp minced garlic
2 tsp dried thyme
4 lb boneless pork loin
2 tbl oil, mixed with 1 clove garlic, minced
Preparation
Preheat oven to 350°
In large bowl combine all ingredients except pork and oil. Set aside.
Slice pork horizontally stopping 1" from back. Lay pork out flat. Cover with spinach mixture. Roll up and string. Rub with oil and garlic. Roast for 1 1/2 to 2 hours or until at 150 to 160°F.
