Bubble Bread
¼ c. butter, softened
1 Tbsp. crumbled blue cheese
2 Tbsp. mayonnaise
½ c. shredded Swiss cheese
¾ c. grated Parmesan cheese, divided
1 (12-oz.) Italian or French bread loaf, sliced lengthwise
¼ tsp. dried parsley
1. In a small bowl, mix the butter, blue cheese, mayonnaise, Swiss cheese and ½ cup of the Parmesan together in a bowl. Spread the mixture on top of both slides of bread.
2. Sprinkle the remaining ¼ c. Parmesan cheese on top.
3. Broil for 6 min. or until brown and bubbly. Watch it closely – it can quickly burn.
4. Slice and serve. Serves 12.
5. Spray 13” x 9” baking dish with vegetable oil cooking
spray. Place potatoes into the dish. Cover with plastic
wrap & refrigerate until ready to bake if making ahead.
5. Bake 30 – 35 min. until hot.
6. Sprinkle remaining cup of cheddar cheese over the top
of the casserole & bake 5 more min. until cheese melts.
7. Garnish with chopped chives & crumbled bacon before
serving.
