Pavlova
For the shell:
3 egg whites
3/4 cup sugar
1/2 tsp cornstarch
1/2 tsp vinegar
1/2 tsp vanilla extract
For the filing:
1 1/4 cup whipping cream
2 to 3 tsp confectioners sugar
1/2 tsp vanilla extract
1 lb 13oz can sliced peaches
Method
Whip the egg whites until they are quite stiff. Add the sugar, 1 tbls at a time, beating well after each addition. Do not over beat. Add the cornstarch with the last addition of sugar., then fold in the vinegar and vanilla extract. Draw a seven inch circle on oiled wax paper placed on a baking sheet. Sprinkle lightly with cornstarch. Spread half the meringue mixture to cover the circle. Place the remaining meringue in a pastry bag with a large plain nozzle and pipe around the edge of the circle to form a wall, Place in a 200º oven for 2 to 2 1/2 hours until crispy and dry. Open the oven door and allow to cool before removing, then peel away the paper. Just before serving, spread the whipped cream flavored with the confectioners sugar and vanilla extract over the bottom of the shell and pile the drained peaches over the cream.
Alternatives
You may shape the meringue into a cake dome or plain pie shell as an alternative.

Lemon cheese topped with whipped cream
