Gene’s Shrimp and Bacon Corn Chowder
Ingredients
• 6 slices bacon, cooked and chopped
• 3 teaspoons minced garlic
• 1/2 cup chopped onion
• 2 ribs celery, chopped
• 1 cup sliced mushrooms
• 1/2 cup green bell pepper, chopped
• 1 15 ounce can corn, drained
• 1 15 ounce can creamed corn
• 1 cup carrots, julienned
• 1/2 cup cooked spinach
• 1 1/2 pounds baby red potatoes, quartered with or without skins
• 1 teaspoon smoked paprika
• 1/4 teaspoon red pepper flakes
• 1/2 teaspoon Italian seasoning
• 1 teaspoon salt, or to taste
• 6 healthy splashes of hot sauce, I use Crystal or Franks
• 5 cups chicken broth
• 2 cups heavy cream or Half and Half
• 1 cup flour
• 1/4 cup butter
• 18-24 large shrimp, cleaned and tails remove, @ 2 pounds
Instructions
1. Cook and chop bacon, set aside to drain
2. Sauté onion, garlic, green pepper, celery and mushroom
3. Season mixture with paprika, pepper flakes, salt, Italian seasoning
4. Place all other ingredients (except shrimp) into slow cooker
5. Add sautéed mixture and chopped bacon
6. Cook on high for 5 1/2 hours or until potatoes are soft to your taste
7. Add shrimp and cook 10 tp 15 minutes or until shrimp are done
8. Garnish with chopped parsley and cracked pepper .... Serve
