Blueberry Scones
1 1/2 cups all purpose flour
2/3 cup yellow cornmeal
2 tbl granulated sugar
2 tbl packed brown sugar
1 1/2 tsp baking powder
1/4 tsp baking soda
1/3 cup cold buttermilk
1 egg
1 1/2 tsp finely shredded lime peel
1 cup frozen blueberries
1 tsp cornstarch
3 to 4 tsp lime juice
1 cup powdered sugar
3 tsp chopped almonds, toasted
Preheat oven to 450F; spray large baking sheet. Combine in large bowl: flower, cornmeal, granulated sugar, brown sugar, baking powder, baking soda and 1/2 tsp salt. Cut in the butter until flour mixture resembles coarse crumbs. Make a well in the center. Combine buttermilk, egg, and peel; add all at once to flour mixture and stir till moistened. Toss berries with cornstarch to coat and add to flour mixture. Stir gently until berries are incorporated. Drop dough in twelve large mounds on baking sheet, leaving about an inch between.
Bake for 12 to 15 minutes until tops are golden. For icing, whisk enough lime juice into powdered sugar until it is of drizzling consistency. Drizzle over warm scones.
