Mother Zdenka's Stuffed Peppers
Stuffing ingredients
8 peppers
50 dg ground meat: beef, pork, veal or mixture
10 dg cooked rice
1 onion chopped and sautéed
Pepper, salt and green parsley
Sauce ingredients
8 dg oil or bacon
15 to 20 dg onion, chopped
50 dg fresh tomatoes
Salt
1/8 l sour cream
1 tsp flour
Method
Mix meat with salt, pepper and sautéed onions. Add the rice and other stuffing ingredients. Stuff into peppers.
For the sauce, sauté onion in oil or bacon. Add fresh tomatoes (tomato paste, if desired). When tomatoes are sautéed, add stuffed peppers and simmer until meat is done and peppers are soft. Turn peppers occasionally to ensure uniform cooking.
If needed add 1/8 l of sour cream mixed with 1 tsp flour to thicken sauce. Season with salt.
Set peppers aside and push sauce through sifter or blender.
Serve with your choice: dumplings, rice, potatoes, whatever.
