Marinara Sauce and Eggplant Parmigiana
Marinara Ingredients
3 tbls evoo
1 medium onion chopped
4 garlic cloves thinly sliced
2 28 oz cans pureed tomatoes
1/2 tsp crushed red pepper flakes
Coarse salt
Freshly ground black pepper
1/4 cup fresh basil
1 tbl fresh oregano
Marinara preparation
Heat oil over medium heat; cook onion and garlic until translucent. Add remainder of ingredients, except herbs. Cover and simmer for 25 minutes and add herbs at end.
