Zucchini Soup
1/4 cup butter
1 cup of leeks
1 cup of potatoes
2 cups of grated zucchini
1/2 cup grated carrots
1/4 quart of chicken stock
1 tsp salt
1/4 tsp pepper
Sautée leeks until translucent and add all other ingredients and simmer for about 1/2 hour.
Purée with seasoning. Serve hot or cold. If cold add little bit of cream and slightly over salt
